Small Batch, Big Flavor: Our Craft Process
Making jerky isn't complicated. Making great jerky is an art form.
Every batch of Jon Juan's starts with sourcing. We work directly with premium beef suppliers who understand our standards. We're looking for specific cuts with the right fat-to-meat ratio — not too lean, not too fatty. The balance matters.
Once the beef arrives, it's trimmed by hand. No machinery, no shortcuts. Each piece is inspected and cut to the exact thickness we need — thick enough to be substantial, thin enough to dry properly.
The marination is where the magic happens. Our blend of Korean and Mexican spices is mixed fresh for each batch. The beef is submerged completely, then sealed and refrigerated for a full 24 hours. This isn't aggressive marination; it's patient infusion. The flavors seep into every fiber, transforming the beef from inside out.
After marination, the beef is arranged carefully on drying racks. We use precision dehydrators set to exact temperatures — hot enough to dry without cooking the meat, gentle enough to preserve the tender interior. The process takes 8-12 hours depending on thickness and humidity.
As the jerky nears completion, we do final inspections. Any pieces that don't meet our standard don't make it into bags. We're not in the business of compromise.
Once dried to perfection, the jerky is packaged fresh. No preservatives needed when you're working with quality ingredients and proper drying techniques. Each bag is sealed with care, ready to deliver bold flavor to your table.
That's the Jon Juan's process. Small batches, big flavor, made with pride and respect for the craft.
