What Is Beef Jerky Made Of? Ingredients Explained

What actually goes into beef jerky? The difference between real craft ingredients and the chemical list on grocery store bags.

The Short Answer

Real beef jerky is made of two things: beef and marinade. The beef is a lean cut — usually top round. The marinade is a combination of soy sauce, spices, chiles, sugar, and garlic. That's it. If your jerky has 15 ingredients you can't pronounce, it's not craft — it's manufactured.

The Beef

Jon Juan's uses premium top-round beef — a lean cut from the rear leg. We hand-select for marbling, thickness, and texture. The beef is hand-trimmed to an even thickness so every strip dries at the same rate. No machine-pressed meat. No trimmings. No "beef" that's actually mostly fat and connective tissue.

The Marinade — What Goes Into Jon Juan's

Soy sauce — the base. Salt, umami, and it tenderizes the beef. Brown sugar — balances the heat and adds caramelization during drying. Garlic — aromatic depth. Chile peppers — jalapeño, habanero, or gochugaru depending on flavor. Gochujang (Korean BBQ only) — fermented Korean chile paste. Sesame oil (Korean BBQ only) — nutty, savory depth. Vinegar — brightness and preservation.

What You Won't Find in Jon Juan's

No sodium nitrite. No MSG. No artificial flavors. No artificial colors. No high-fructose corn syrup. No preservatives beyond what naturally occurs in salt and vinegar. No fillers. No "meat glue." No mechanically separated meat.

How to Read a Jerky Label

Look at the ingredient list on your grocery store jerky. If you see: sodium nitrite, MSG, hydrolyzed soy protein, corn syrup, caramel color, or "natural flavors" (which can mean almost anything) — you're eating a manufactured product, not a crafted one. The fewer ingredients, the better. Real jerky has 6-10 ingredients. Manufactured jerky has 15-25.
